Tomorrow, Sunday April 8, 2012, marks the most holy day in the Christian faith, Easter Sunday. While this holiday marks the remembrance of the resurrection of Jesus Christ from the dead in all countries, it is not celebrated the same. Here in America the day is celebrated with Sunday church services, decorating eggs, Easter egg hunts, Easter bunnies, and Easter baskets full of chocolate eggs and jelly beans are given to children as gifts. 7 AprMeatless Monday: Vegetarian Quesadillas
1 AprIt’s springtime and you know what that means….bikini season is right around the corner! For those of you who are just trying to drop a few pounds (being that too much meat and not enough fiber causes your stomach to bloat) or trying a new lifestyle, this is a tasty, filling and healthier quesadilla option.
NOTE: this recipe can easily be adapted to a gluten free and/or vegan option.

Ingredients
- Seasonings (to taste)
- Adobo
- Black Pepper
- Mrs. Dash
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped zucchini
- 1/2 cup chopped yellow squash
- 1/2 cup chopped red onion
- Note: I did not add these in because I’m not a fan of onions
- 1/2 cup chopped mushrooms
- 1 tablespoon olive oil
- cooking spray
- 6 (9 inch) whole wheat tortillas
- Note: May be substituted for gluten free wrap bread
- 1 1/4 cups shredded taco cheese
- Note: May be substituted for vegan cheese
Directions
- In a large nonstick pan, season and cook cook red pepper, zucchini, yellow squash, onion, and mushrooms in olive oil over medium to medium-high heat for about 7 minutes, or until just tender. Remove vegetables from pan.
- Coat the same pan with cooking spray, and place one tortilla in pan. Sprinkle 1/4 cup of cheese evenly over tortilla, and layer 3/4 cup of the vegetable mixture over the cheese. Sprinkle another 1/8 cup of cheese on the vegetables, and top with a second tortilla. Cook until golden on both sides, for approximately 2 to 3 minutes per side. Remove quesadilla from pan, and repeat with remaining ingredients. Cut each quesadilla into 8 triangles with a pizza cutter. Serve hot.

Susana Baca – The Afro Peruvian Diva
25 MarBorn in a coastal fishing town in Lima, Peru, Baca’s music is a mixture of traditional and contemporary. The two time Latin Grammy Award winner uses a backing band that features indigenous Peruvian instruments such as the cajón (“wooden box”, whose origins lie in an upturned fruit crate), udu (clay pot), and quijada (jawbone of a burro) “cheko” a dried gourd, as well as acoustic guitar and electric upright baby bass. Although many of her songs are based on traditional forms such as the landó or vals, she also incorporates elements of Cuban and Brazilian music.
Aside from her accomplished music career, Baca is a political figure. In July 2011, she was named Peru’s Minister of Culture in the Ollanta Humala government.[1] becoming the second afro-Peruvian cabinet minister in the history of independent Peru. In November 2011 she was elected for the OAS (Organization of American States) to be the President of the Commission of Culture for the period 2011 – 2013. Baca proves that being an entertainer is no excuse to turn a deaf ear and a blind eye to your communities social issues.

Today is Mardi Gras or FAT Tuesday as many people like to call it. It is also known as Paczki Day in Polish communities throughout the world. Paczkis are donut like Polish pastries that PACK ON THE CALORIES at a whopping 400 calories and 25 grams
of fat for just one Paczki! The pastries are only made and served on Fat Tuesday by Polish Catholics. Fat Tuesday is the day before Lent begins in the Christian religion. Video Vixens like Cubana Lust did not take the well beaten path into video model super stardom. She has done what many of today’s eye candy are doing BYPASSING THE MUSIC VIDEO. These ladies have discovered that through the power of the internet they no longer have to wait for a rapper to make them a household name. Putting their intellect and entrepreneurial skills to work “sistahs are doing it for themselves”. Running their own websites, twitters, and YouTube channels that boast hundreds of thousands of subscribers, it seems as though rappers are being cut out the game. Ms. Lust’s recent viral video does have music by Young Jeezy as the featured song, however, it is CLEAR who the star is.
